History
Vanilla extract comes from vanilla. Most vanilla these days comes from Madagascar and is used many ways. Vanilla being used as an extract is the most common way it is used. However, vanilla beans were used before extract was ever created. Vanilla extract has only been used for the past 100 years or so. Vanilla extract was first used as a medicine for an upset stomach. It then became more common in baking and as a flavoring.
Types
According to the Vanilla Company, although there are more than 150 varieties of vanilla, only Bourbon and Tahitian are commercially used. These two types are used to make vanilla extract. When choosing vanilla extract, look for a bottle that is labeled "pure." Imitation extract has about half of the vanilla flavor as pure vanilla extract. Cooks and chefs say that imitation vanilla extract can leave a bitter taste. To be considered pure vanilla extract by the FDA, each gallon has to be 35 percent alcohol and 13.35 oz. of vanilla bean.
Time Frame
Vanilla extract does not have an expiration date. Because of the alcohol content of vanilla extract, it matures with time. Pure vanilla extract has more alcohol in it and will not expire. Imitation vanilla extract will begin to lose its flavor after a year or so when opened. It still will not go bad, but it will just have a weaker taste.
Function
Vanilla extract is most commonly used in baking. It also has other uses around the house. It can be used as an extra flavoring even when not needed. Try it on ice cream, with seafood, on fruit or in cereal for added taste. It can also be used as a deodorizer in the fridge or microwave. Just wipe down the fridge with vanilla extract or microwave a little bit of it for a minute to remove bad odors. Vanilla extract can be added to paint to help offset the strong paint fumes. Mix a cup of water and a tablespoon of vanilla extract for a homemade insect repellent. Due to the alcohol in vanilla extract, it can be used on minor burns to help relieve pain.
Warning
Pure vanilla extract can have a strong taste and smell. Do not overuse it. Refer to recipes or household measurements to get the usage correct. Do not add vanilla extract to warm or hot liquids. The alcohol will evaporate and some of the vanilla flavor will be lost. If vanilla is needed for a hot item, use vanilla powder instead of vanilla extract.
